Caramelized onion and Haloumi Tart
- Serves 4
- Preparation time: 10 minutes
- Cooking time: 25 minutes
Try adding toasted Haloumi to your favourite burger or sandwich for added texture and flavour.
Ingredients:
- 1 sheet puff pastry, cut in half
- 1 275g jar caramelized onion
- 180g Lemnos Haloumi, grated
- 250g punnet cherry tomatoes, halved
- 1 egg, lightly beaten
- 1 tablespoon fresh thyme leaves, plus extra sprigs to garnish
- Mixed leaves and sliced red onion to serve
Method:
- Preheat oven 200C, grease and line 2 oven trays.
- Place 2 rectangles of pastry on each oven tray. Score a 1 cm border.
- Bake for 10 minutes. Remove from oven, push down gently on the centre of each. Brush edges with egg.
- Place ¼ cup caramelized onions on each pastry and spread to the border, top with halved tomatoes then sprinkle haloumi on top. Season. Top with thyme leaves
- Place trays back in the oven for 15 minutes or until tomatoes have softened and cheese has melted.
- Serve with mixed leaves, onion and extra sprigs of thyme.
