Roast Vegetable Salad with Lemnos Fetta
- Serves 4
- Preparation time: 50 minutes
Embrace your creative side with Lemnos Fetta Salad Cubes.
Ingredients:
- 8-10 baby beets
- 1 small pumpkin
- 1 red onion
- 1 zucchini
- 1 capsicum
- 4 tbsp oil
- ½ cup quinoa prepared to packet directions
- 150g Lemnos Fetta Salad Cubes
- 1 tsp smoked paprika
- salt and cracked pepper to taste
Method:
- Preheat oven to 180 °C.
- Slice and dice vegetables into nice chunky pieces, place onto a lined baking tray, drizzle with oil, season to taste and then roast until the vegetables are tender and a little crispy.
- Allow the vegetables to cool slightly before transferring them to a large mixing bowl.
- Add Lemnos Fetta Salad Cubes and, if desired, dress the vegetables with oil, paprika and cracked pepper. Add the quinoa and mix until combined.
- Serve.
