Roast Vegetable Salad with Lemnos Fetta

  • Preparation time: 50 minutes

Embrace your creative side with Lemnos Fetta Salad Cubes.

Ingredients:

  • 8-10 baby beets
  • 1 small pumpkin
  • 1 red onion
  • 1 zucchini
  • 1 capsicum
  • 4 tbsp oil
  • ½ cup quinoa prepared to packet directions
  • 150g Lemnos Fetta Salad Cubes
  • 1 tsp smoked paprika
  • salt and cracked pepper to taste

Method:

  1. Preheat oven to 180 °C.
  2. Slice and dice vegetables into nice chunky pieces, place onto a lined baking tray, drizzle with oil, season to taste and then roast until the vegetables are tender and a little crispy.
  3. Allow the vegetables to cool slightly before transferring them to a large mixing bowl.
  4. Add Lemnos Fetta Salad Cubes and, if desired, dress the vegetables with oil, paprika and cracked pepper. Add the quinoa and mix until combined.
  5. Serve.
