Haloumi Chicken with Basil & Prosciutto
- Serves 6
- Preparation time: 20 minutes
- Cooking time: 25 minutes
When entertaining, serve chicken sliced on a large platter with accompanying vegetables. • Try using fresh oregano or thyme in place of basil. • Save time by purchasing grilled capsicums from the delicatessen or in a jar. • If prosciutto slices are small, use 2 slices of prosciutto per chicken fillet.
Ingredients:
- 6 small skinless chicken fillets
- freshly ground black pepper, to taste
- 1 tbs olive oil
- 180g Lemnos Haloumi, cut into 6 thick slices
- 18 fresh basil leaves
- 150g roasted red capsicum cheeks
- 6 long thin slices prosciutto
- olive oil spray
- steamed green beans, for serving
Method:
- Cut a deep pocket in each chicken fillet and season well.
- Fill each fillet with a slice of Haloumi and 3 basil leaves. Top each fillet with a capsicum cheek and wrap in prosciutto to enclose.
- Heat a large non-stick frypan over medium-high heat, lightly spray chicken with oil and brown on both sides until golden. Transfer to the oven and bake at 180°C for 20 minutes or until chicken is cooked through.
- Rest chicken for 5 minutes before slicing and serving on a bed of steamed green beans.
