Penne with Haloumi, Bacon and Broccolini
- Serves 4
- Preparation time: 10 minutes
- Cooking time 20 minutes
This great pasta dish is a perfect mid-week meal. It has it all – loads of colour, lots of flavour, is really affordable, and best of all, it’s ready to eat in under 30 minutes.
Ingredients:
- 180g Lemnos Haloumi cut in batons
- 250g penne or your favourite pasta
- 8 rashers of streaky bacon cut in 1cm pieces
- 3 tbsps extra virgin olive oil
- 3 medium cloves garlic finely chopped
- 2 long red chilli deseeded and thinly sliced
- 1 bunch broccolini washed
- ½ cup packed basil leaves torn
Method:
- Cook the pasta following the manufacturer’s instructions for al dente. Drain it and reserve a little of the cooking water.
- Cut any thick broccolini spears in half length-ways so they all cook evenly.
- Heat a large frying pan or sauté pan to a medium heat, add the olive oil and fry the haloumi batons, turning once until they are just golden. Remove from the pan.
- Fry the bacon until it’s just starting to brown, add the chilli slices, garlic and broccolini spears. Cook until the broccolini has turned bright green (about 2 minutes).
- Return the toasted haloumi to the pan with ¼ cup of the cooking water and toss through the pasta and torn basil leaves. Season generously to taste and serve immediately.
