Smoked Salmon & Ricotta Pizzettas with Rocket

- Cooking Time: 15 minutes
Preheat oven for up to 30 minutes before cooking pizzas or use a pizza oven to ensure a crisp result. For extra crisp pizza bases, place pizza bases directly on oven racks to cook.
Ingredients:
- 8 small pre-bought pizza bases
- 250g Lemnos Organic Ricotta Cheese
- 250g sliced smoked salmon
- 1 small red onion, thinly sliced
- 1 tbs baby capers
- olive oil, for drizzling
- 1 1/2 cups baby rocket leaves
- 1 tbs olive oil, extra
- 1 tbs red wine vinegar
Method:
- Bake pizza bases in a hot oven 220°C for 5-8 minutes until just crisp.
- Remove from oven and spread with ricotta. Top with salmon, onion and capers. Drizzle with a little oil and return to oven for 5 minutes.
- Toss rocket, oil and vinegar in a bowl to coat and divide between hot pizzettas. Serve immediately.
